A week gives room for the weather to turn for a day or two without wrecking the whole trip, since there are enough other days to make up for it. It also tends to work out better value once you compare nightly rates: parks generally price a week more favourably per night than a short midweek stay, since the fixed costs of changeover are spread across more nights.

Local towns settle into a different rhythm too. Cafes and pubs that queue out the door in August have tables free by October, seafood stalls are still trading, and a Sunday roast after a long walk is a proper autumn ritual rather than a summer afterthought. Some seasonal kiosks and smaller attractions do close for the year by half-term, so it's worth checking specific opening times rather than assuming a summer list still applies.
The practical advice is the same whichever May date is the target: check the actual calendar for the year in question, since bank holiday dates move, confirm it against your children's specific half-term dates if that's part of the plan, and book earlier than feels necessary. May fills up quietly and then, in the specific weeks that carry a bank holiday, fills up fast.
